All experience is valuable. You have to constantly be learning. You don't even know right now, what you don't know. You probably have no idea of what it takes to be an assistant editor - even though you have been doing completed videos for your non profit. Your next step is to find video companies in your area (every state has a film commission, they all have a film production directory) - look at Production Hub, and start calling every major corporation in your area. They will all have video departments. The #1 thing you will get out of making these calls is getting rejected over and over again. This is critical to get used to - because you won't really care if the local hospital system rejects you - but you WILL care when you eventually go to LA or NY and some real production company rejects you. Start applying for jobs - learn how to apply for jobs. It's not going to be at the convenience of Reddit or "monster.com" or "indeed.com" - go out in the world, make calls, embarass youself, and find out where these people are.
