The problem even with HTTPS is that the DNS provider still knows what you searched for. You ask for google.com, it sends you back the IP address of google.com. DNS over HTTPS does nothing more than encrypt the DNS request between you and the DNS provider to prevent MITM shenanigans. It doesn't ultimately hide what you searched for.
