Pop!_OS

Since you're coming from Mac anyway you could also consider using Linux as your OS for the PC, game support is pretty great these days and there's an extremely good mac flavored linux.

Ninite

If you're sticking with windows then ninite is pretty cool for getting a base set of programs on the machine. Here's a setup I'd recommend for most people.
