Tech illiterate art student here, should I go with Kubuntu or Linux Mint?

    Ventoy is an open source tool to create bootable USB drive for ISO files.

    I suggest that you create a Live USB stick with Ventoy, and add the ISO for each of Mint, Kubuntu, Lubuntu, and whatever else you want to check out. Each you time you boot from the stick, you choose one of the ISOs to use. They won't affect your computer at all (as long as you don't tell them to install!). That way, you can test them out to see which one you prefer.
