Any advice for us walkers who are getting screwed over by Uber and probably can’t pay rent because of it?

If you can check on freecycle.org or nextdoor.com both of those are good areas to ask about a bike. If you post your story about doing doordash/ubereats, and need it to help you continue your job, someone might be willing to help you with one. One other suggestion might be to see if you can buddy with someone in your area, that you both go in on a bike, and take turns with it (obviously if you can trust them) so one delivers days, one nights, or the like.
