(I had tried https://lockdownprivacy.com/ in the past and it is quite good) However if I want to block ads in apps and not only in Safari, I use and suggest to add a dns profile. You can find it here https://encrypted-dns.party/ the most famous ones but you can also create them by yourself. Currently, I alternate between Mullvad and Nextdns.
