LMMS is another, and is my music production suite of choice. Free and open source (GPL2). Comes with a beat line editor for simple drums, a nice collection of samples (that you could expand on with your own or find other free or paid ones online). A nice collection of instruments/synths, as well as the option to use external VSTs through Carla or Vestige.

Ardour is another open source project (GPL2). It has paid binaries, but you can compile from source if you want it for free. It can do pretty much anything LMMS does + recording, but has less default instruments and samples. It is also imo a bit more annoying to set up. A great source to learn from in ardour though is unfa. In his older videos he is using LMMS, but newer ones are ardour.
