Need help with setting up email

Poste.io Mail-in-a-box
  1. Full featured email server built in docker with free plan.
I tried setting up my own personal email server with poste.io, Mailcow, and Mailu. None of them worked. With poste.io, I was able to receive emails, but not send them. With Mailcow, I keep getting a error with something about a pool when trying to compose using the docker-compose.yml. Finally, with Mailu, docker compose says there's an issue, which I feel shouldn't be happening. I really want to use mailcow since its in a docker, and there's a bunch of videos to help me if I run into any issues later on. I was wondering if anyone could help me setup my email server, step by step. Thanks!

For me as a beginner, I found mail in a box easy to set up, it is much more basic than mailcow and only requires 500 MB RAM: https://mailinabox.email RDNS is recommended as the big commercial providers will flag your messages as spam otherwise.
