Only thing I can suggest is trying out processing all your music through MusicBrainz Picard before adding it to Jellyfin. I’ve never had any issues with my metadata using this method.     This will be coming from the tags on your audio files. There are two types of tag commonly used ID3 version 1 and ID3 version 2. Some formats such as MP3 can support both simultaneously and some formats such as FLAC support version 2 only. It's possible to have tags both for (track) 'artist' and 'album artist'.
