Https://imazing.com/ can do it, but yes, would be nice if it was built in photos and videos and notes you can bulk download from https://privacy.apple.com/ - like google takeout, takes several days believe they mail you a link to the zip. - Source: Hacker News / 5 months ago

No, not backed up. You have to use 3rd party SW to ‘extract’ it from the phone. Likely the most know one is https://imazing.com/ but there are a few others as well. Source: 8 months ago
Used this program last night called iMazing to extract and export tens of gigabytes of iMessage texts just from one person, and the pdf for it all came out to nearly 2gb and is 7100+ pages long. Source: 10 months ago

I don't have much experience with Jamf specifically so I don't know if they have a tool for this, but you can you software like iMazingand ProfileCreator to create the profiles from a GUI and then push the profiles from to devices using Jamf. Using either of these apps, under "Restrictions", you'll be able to deselect whatever iCloud service you want to be blocked and then save it to a profile. Source: 11 months ago
Not selfhosted but I have a Mac mini running imazing with backups with tailscale so it run a backup regardless if I’m at home or not. Source: 11 months ago
I would use iMazing [Imazing home] but TBH how much this stands up under law is questionable. I was taught (U.K. In house training) that 'rule of last' [LawTeacher site] applies - all text messages are either followed up by a written contract (best) or email as 'phones can be spoofed / 'borrowed' easier than contracts. You could use something like iMazing to back up your iPhone locally to your computer. You can choose what all gets backed up. You can have it extract the text messages themselves as well as any media. I have used it to save all photos that were sent to me via SMS from specific people to ensure that I didn't lose them.
