On Facebook, I often see captions printed on top of the video as a separate block (see example below) which solves my two issues! Unfortunately, the only program I can find to create captions like this is zubtitle.com which is great if you want auto-generated captions that are only available in the language spoken in the video. Not sure if this is applicable, but if you're using Word or Scrivener or something, you may want to switch to a plaintext editor like Dark Room or Typora--something that won't underline your spelling and grammar mistakes.
