I use scrcpy with the Dex Dock and a dummy HDMI and connect wirelessly through tcpip to the dex instance. It smoothly runs at 50-60 fps (1080p), but I have capped it to 45fps since that's enough for my use case. If you want to give scrcpy a try I'd suggest reading a bit of the documentation of the dev on github or watching a YouTube quickstart guide.
