There’s a lot of resources to help learn bubble, but I also recently created a bubble course at https://nocode.mba (with a 7 day free trial) The first tutorial in it actually covers that exactly (create a to do list by filling out a form). I'd say doing some sort of training might be the most beneficial thing you can bring to the NGOs. There are also organizations such as Omdena (https://omdena.com/). They solve different challenges and would probably appreciate some support, even some sort of mentorship.
