The Date Taken data should be preserved which is more important than the file date. You can sort your folders by Date Taken or what I do is use NameExif to rename my photos by date/time taken, which means they’ll always sort correctly and the info can never be accidentally lost. To be upfront, though, most modern phones tend to scrub this information, so it would be quite a long shot.
