I'm a software engineer, and before getting my rM2, I kept all of my notes in Markdown format. They're under source control (git), and I use mkdocs to build them into a static website. Regardless, both latex and all the latex editors I've used (including overleaf) are not wysiwyg, but they tend to have both a source pane and a document preview pane that makes quickly editing nicer. I generally use Kile (good screenshot). Source: over 2 years ago
