Great list, thank you. One option is to always have more than one payment processor activated. Splitting payments across providers early on doesn’t have to be a bad thing. I know it feels like overkill, but I’d recommend either outsourcing (even Stripe has usage-based billing if you can keep your updates under 100/s) or using something off-the-shelf like https://killbill.io. I used custommade.com for another style ring recently. I was happy with the pricing, service, design, and wait time. It will take about 3-4 weeks for them to take it from design to completion but any other service is going to be around the same turnaround time. Source: 12 months ago

I loved the concept. A company like custommade.com (I have no affiliation BTW) could be used to design and make each ring according to the person's preference. At first I was going to have the entire ring customized through custommade.com, but after several failed CAD attempts, I truly think the ring style I want is too complex for them to replicate even after I have given them many photos and interactive videos from several different angles of the exact ring I want.
