You can also use an online TV guide provider like Zap2It to provide an xmltv file to have Plex handle the multiple tuners rather than XTeVe. Either option works. Source: over 1 year ago
For your XMLTV check out zap2xml it's a script that will run daily and scrape tv listings from https://tvlistings.zap2it.com/ to create an xml file, it's free and works great as long as they have tv guide info for your desired channels, I have been using it with jellyfin for a while without any issues.
