Maybe try InShot or Clipify? These are pretty usual video editors but the usage is simple and adding a new video to the compilation won't take a long time. My video editor of choice is Kdenlive. It's modeled after Adobe Premiere (more or less), and has a bit of a learning curve. Olive is another promising option, but similarly tricky to master.
