I heard about devbox [1] but I haven't tried it yet. Perhaps it could suit your needs. Back in the day I used "Norton Ghost" to create a full image of a just-installed windows just in case I needed to go back in time. With standard computers, I usually deploy something like the fog project and automate the process over pxe with scheduled reboots. I guess you could do that as well with your VMs but that seems overkill. Source: about 1 year ago

I've had good luck with Sysinternals Disk2VHD. I've run it from live installs of Windows, saved the resultant VHD to another drive, then spun it up in Virtualbox. Source: 11 months ago

In addition to individually copying important files and folders, use Disk2vhd from Microsoft Sysinternals. Check "Use VHDX" and "Use Volume Shadow Copy" and check all volumes the HDD contains but not any volumes from other disks. Create separate files if backing up multiple disks. Source: about 1 year ago

You can create an image backup of all intact contents within all partitions of the HDD, using Sysinternals Disk2vhd. This won't include deleted files and unused space. Source: over 1 year ago
