The first time I do a recipe, I follow the recipe, but I make a small batch. If you find a recipe at food.com, you can scale it down to 1 or 2 servings. Then you can decide if it needs more or less of something. For me, I like more pepper and more garlic than some recipes call for. Try looking at OAMC (Once a Month Cooking) recipes online. I know there's a specific subreddit too, and you can use those two search terms (intials and spelled out) on sites like Allrecipes and food.com.
