When it comes down to it I do think the emulation scene is mostly about games, and the Apple II was not a very good game machine due to its barely adequate sound and weird color. Have you used FCEUX? Check out RetroBat. It uses EmulationStation as the frontend and comes pre-packaged with all kinds of emulators; kinda like RetroPie but for Windows. It uses RetroArch as well as standalone emulators. Source: over 2 years ago
