There is a similar program called exiv2. Exiv2 is a C++ library, so it's more commonly used in other programs, while exiftool is written in Perl. Even the Windows "executable" is simply a minimal Perl interpreter and the code which is PAR packed. Source: over 1 year ago

Otherwise you're maybe better off copying the files first and sanitising them before you create the tar. Maybe something like MAT can help here or you could write a script that performs some preset actions to remove or replace any metadata you don't want the files to have before you create the archive.
