Just use gooogle docs , no advantage of paying for notetakers now. Obsidian is really good - I would suggest to look at a different approach rather than having best/efficient workflow try a different approach of having fastest workflow i.e try internal information search tools like glean , www.usefindr.com , dashworks.ai .
