Depending on the time of year, you might want to look at a repositioning cruise ship, they do summer in the Mediterranean and winter in the Caribbean, very affordable too. https://cruisesheet.com/ is a handy way to search for deals. Some booking websites allow you to search specifically for hostels. I just took a quick glance, and expedia.com allows it. Booking.com doesn't appear so, but maybe I missed something. Source: 12 months ago
Whatever safe bed you can find at this point. You've left it too late to be picky and it's looking like it's going to be the start of the the busiest, boomiest tourist season here in Italy ever.
