For recording (and editing) just me and a mic, I generally use Adobe Audition, I have been experimenting with demos of Ableton and Logic, but not committed to either yet. For recording a mic plus an application or VoIP call, I pretty much always use Audio Hijack, it’s a classic macOS app for a reason.
