You can control almost all of what youre looking for using a system called camranger. They also sell a tripod head which means you can control the direction of the camera. Do you have a laptop with a USB 3.0 port? If you have that and a long USB 3.0 cable with the Micro-B connector on one end (which looks like this) then you can connect the D810 to your laptop and use a tethering app on the laptop to both see the camera's live view and to control it. What's really interesting is Entangle. https://entangle-photo.org/ It works with a lot of DSLRs, it doesn't require you to do any of these steps, and it captures the output. The only thing it doesn't do is then map that to an output for other applications to pick up. This. Go for tethered capture on a pair of old dSLRs and use something like an rPi or just bloody long cables to pull the images to an always-on linux box.
