Maybe try Reincubate Camo, a software to use the iPhone as camera which is independent of Apple's continuity. I used it on windows when working at home in 2020 and 2021 during pandemic, and it had quite good video quality superior to built in cam of my laptop. They have it also for MacOS. Grab an old DSLR off eBay, and get a suitable dummy battery DC adapter and intervalometer for it. If you get a Canon that Magic Lantern supports, you can use a software intervalometer instead.
