Maybe try Reincubate Camo, a software to use the iPhone as camera which is independent of Apple's continuity. I used it on windows when working at home in 2020 and 2021 during pandemic, and it had quite good video quality superior to built in cam of my laptop. They have it also for MacOS. Acestream Uses the BitTorrent protocol to stream video, which is pretty neat. Not sure how effective that can be wholesale, as it’s speed and therefore quality would depend on having a big enough concurrent network. It’s been around a while though. Source: over 2 years ago
