If you still want to proceed, I suggest you first manually convert each pdf to a .txt file with https://pdftotext.com/. I tried working with the actual monster manual pdf and it's a big mess. Although it looks pretty in a pdf viewer, the textual representation is highly irregular. The .txt version I got from that website is nice. Source: about 2 years ago
