There are services such as 3playmedia.com that can transcribe within 2 hours of upload and deliver a .VTT or other subtitle/caption file (whatever is required for captions in your editing software). "Regular" people don't really need FFMPEG. Regular people need tools with GUIs that have a non-generic purpose. So stuff like https://kdenlive.org/en/ that are backed by ffmpeg are (imo) superior "regular" person tools.
