PikaPods founder here. Happy to hear you like the service. As for your question, the closest open source alternative I'm aware of are Caprover and Yunohost. Just not sure how maintained their apps are. At PikaPods we update and test new releases every other week, which is a major value added. Someone else suggested Caprover, and it seems alluring since it promises to automagically do all of these things. I'm feeling compelled to try it out and slowly dip my feet in how it all works together and perhaps create a system in which I'd have more control, like the one you suggested.
