Can you use the markdown formatting in a normal text editor or something like Google Docs? For example putting [x] for a checked box, putting # for a header, etc. Since you can easily read markdown even without rendering it.

Google Docs or other word processors might be a little more iffy, since what they save is not just straight up text. If you wanna use an online editor, you could go with something like HackMD (or HedgeDoc, if you want to host your own).
