Why not. [name+shopping@proton.me](mailto:name+shopping@proton.me), [name+socials@proton.me](mailto:name+socials@proton.me) as a example. Although this way the sender will always know your e-mail since +aliasing seems to be quite common. So to avoid your e-mail ending up in different spam databases you could use https://simplelogin.io and have it forward every adress to your proton account. That way if you start getting random spam you can disable just that e-mail alias.
