Where are you seeing that? I can't find any reference to youtube nor its APIs in its codebase. Do you perhaps mean the use of OBS to stream to youtube? That's a different thing, which you can also do with Owncast.

In their own list, they provide numerous alternative hosts that are compatible with the S3 API. Also interesting would be that they even mention a Free Software self-hosted option too, MinIO (yes it's AGPLv3-licensed). The S3 API is simply a de-facto standard for object storage, that's all. Ceph also offers S3-compatible object storage.
