Catchafire

Not a competition, but check out catchafire.org. You get paired with a nonprofit to do volunteer work. Most of the scopes of work are very manageable: redesign a logo, update a website with pre-made assets, make a flyer or a brochure. The major benefit is that it's a real organization and you don't have to say that it's volunteer work, you can just talk about working with the client and what their vision was and how you achieved that through your design in your portfolio.
