Signal is mostly fine, consider self hosting a XMPP, but if not stick with Signal, (on Android you can use Molly instead of the Signal app).

Nextcloud

Icloud is not secure (see [1] and [2]) use Nextcloud, self host if possible, of not use a provider outside of the Five Eyes its recommended to stay outside of the Fourteen Eyes but at the bare minimum stay outside the Five Eyes.
