I meant to say, right now there are services operating on iCloud.com, right? Could it be the case that those services operate without end-to-end encryption? Not sure, but I don't think so. If you still have the account, you can access everything on icloud.com , including photos, contact. I think you can at least recover contacts if you don't have a backup, yet some apps automatically register their data inside icloud. Source: 6 months ago

Sorry, see you are using iCloud mail correct (an address that end in @ icloud.com, @ me.com, etc)? If so, it's an IMAP address. Source: 6 months ago
That said, even if you choose "Remove from Mac", you're not loosing them. They will stay in cloud server and you can still redownload them again anytime, either by re-enabling iCloud Drive, or download from web interface icloud.com using a web browser, or access using mobile devices like iPhone or iPad. Long story short, I want to transfer my dropbox folders of photos (organized per year) to icloud. I am trying to do this via the desktop webpage icloud.com. But no matter how many times I try to upload the folders, it stops about halfway through. It can't seem to make it all the way through. Always stops within a few hundred photos. On navigating to iCloud Drive using Finder on Mac or Files on iPhone, there is no folder for that app. However, on logging into icloud.com and navigating to Recent files in iCloud Drive, I can see the voice recordings.
