I don't see why we are a long way away. At the sandstorm end, we need to get to the point, where all updates (of both sandstorm and the apps) on the user machine are automatic. Very lightweighy email server that I use and recommend is https://mailinabox.email/ However, after installing it you cannot do any other modifications to the same server because it already configures a customised nginx server and other things, after each update it's not guaranteed that your changes will save.
