I suggest using a hosted nextcloud from a privacy respecting company. I used the Swiss company Woelkli for a couple of years. Since you will not need a lot of file storage, you can use the free tier with 1 GB of storage. Then just configure Thunderbird and Android (via the app DavX5) to use the calendar url. I ended up using the free tier of fruux.com (CalDAV service) to sync tasks to iOS. Everything looked good in fruux but was off by +1 days in iOS, not sure why but it was an easy fix. Source: over 1 year ago
Your original question was about how important it is to encrypt contacts and I think it depends. If you just want to keep your data out of Google's data collection hands, then there are other options to store/sync contacts and calendar data (but most are not E2EE).
