My experience with Melon has been amazing. Melon lets me livestream my broadcast and invite multiple guests with just one click. Definitely worth the price to let me stream to multiple destinations at the same time, I can broadcast my stream to YouTube and Facebook for my audience on multiple platforms!

Some may not use Streamlabs Desktop at all, there are web-based podcast streaming tools like Melon that have automatic/responsive layouts that change bages on the number of guests or if one is sharing their screen. Source: about 2 years ago

I have a few recommendations based on your concerns. Find a VTT that fits your playstyle. Let the players keep their own character sheets. Have everyone roll real dice. Only use a VTT for sharing maps and placing tokens. owlbear.rodeo or astraltabletop.com have clean, simple interfaces. Astral Tabletop https://astraltabletop.com currently has my attention. A free account is somewhat limited, and I can imagine you may need to only have uploaded whatever assets you need for the next session due to space limitations, but it's easier to use and way more pretty than anything else I've tried.
