If it's a personal one, go to contacts.google.com and remove the contacts from there. You can also remove them from the Contacts app if you're syncing contacts with Google, but just going to the website is more straightforward for removing them from the cloud. Source: 10 months ago

Got a great suggestion from user MrPanofsky who recommended fruux. Gonna use calendar Fruux (https://fruux.com) in combination with calendar client OneCalendar (https://apps.apple.com/se/app/one-calendar/id1238379385?l=en-GB). Source: 9 months ago
I ended up using the free tier of fruux.com (CalDAV service) to sync tasks to iOS. Everything looked good in fruux but was off by +1 days in iOS, not sure why but it was an easy fix. Source: over 1 year ago
Your original question was about how important it is to encrypt contacts and I think it depends. If you just want to keep your data out of Google's data collection hands, then there are other options to store/sync contacts and calendar data (but most are not E2EE).
