I too use a catchall address... And I'm always disappointed when Fastmail doesn't take all of the addresses that I get email sent to, and turn them into masked emails automatically! Though FWIW my real answer, if you were asking this as a practical question rather than an educational exercise, would be to find some existing standard encryption program and use that.
