Regarding symlinks I'm not sure if you're referring to a folder somewhere on my local system - which of course will not be practical when pushing live or to remote - however one way I have been attempting to do this is to fork vendor folders and then pull using composer for the latest commit..   For PHP https://platform.sh has got a lot of traction, but it's notc cheap especially for small apps.
