I do a similar thing. I also check https://roadcurvature.com/map/ to help scout out roads and actually I pair that with Google Earth when streetview isn't available (and Destination Highways helped me find a ton of good roads too). The satellite images from Google Earth are much better than on Google Maps, so you can tell if a road has a center line, is paved, etc. To a greater degree. Source: over 2 years ago
