What I did for my instance (aipub.social) was I took the original logo file from github (https://github.com/mastodon/mastodon/tree/main/app/javascript/images) which is "logo-symbol-wordmark.svg" and pasted the SVG url into this online SVG editor, https://boxy-svg.com/ that allowed me to edit the existing one to my liking, in my case I just wanted to change "Mastodon" to "AIpub". You can download them as SVG files of PNG images. I used to download them as PNG and then edit them on Paint 3D. But, sometimes, you find a coat of arms were, for example, you want a supporter that is behinf the shield or partially-blocked by another element.
