I'm also developing a similar platform called https://postget.dev but this app is in alpha so it's mostly suitable for niche/experimental projects. Something else that may be worth looking into is google's Apigee product or something like https://airtable.com which allows for the creation of ad hoc data sets which can then be accessed through a general purpose API.
