Does it make sense to create separate containers for accessing my gmail and for google searches? Also how do you view cookie information for specific containers?

It doesn't make sense because you can simply disable your search history from your Google account settings. If you believe Google won't respect your privacy, you should be aware that it will still be able to use your IP and other browser information to associate your searches to your Gmail account even if you use different containers or browsers. You'd have to use Tor or a VPN service to hide your IP altogether.
