I would also like to mention about anytype (a true look alike notion alternative) but that software is still in alpha stage so it's closed source and does use some analytics for now to track the usage and improve their app. But once it's out of alpha stage (probably next year) , it will be open source and there won't be any trackers.

I've had great success with using TaskWarrior to manage my tasks. Open-source and terminal-based, though I do use a terminal UI for it, which makes it even more user-friendly.

Not sure if thats what you're looking for but Task.org is a great one. You can use it with a Nextcloud account, if you don't want to, just store the data in your device, or loggin with your google account, which I don't recommend.
