What is a good absolutely minimalist game/rendering engine?

    I unfortunately can't think of any off the top of my head - if you're interested in seeing what some people have done, start by checking out babylon.js first, it's a full engine (development seems to be at least partially funded by Microsoft). Then check three.js (3D webgl) and PIXI.js (2D webgl); there's lots of examples and community project show cases.
