I'd like to get rid of my cell phone and only have a laptop to communicate -- what is the best way to go about this?

I use jmp.chat and it is great. Blabber.im on my phone and Gajim on my PC. FYI, I don't think you can make/receive calls on Gajim, but if someone leaves me a voicemail it will convert to a text message. Blabber.im ap on phone does allow calling over internet.

Hushed App

The only service I could find that really put privacy out front was https://hushed.com/ ... It has temporary number options and doesn't seem expensive. I haven't tested it.
